So, this is one little manga project I'm willing to put in here.

Name: Armour Witches, Crops and Elephants
Genre: Magical Girl
Synopsis: This is the story of a fantasy world where people live peacefully on a small village surrounded by golden cropfields. Occassionally a clumsy elephant comes and is about to stumble upon the cropfields and eat the crops! However, the armoured witches are there to use their most friendly and unhurtful spells to nonviolently drive them away. The positive people that live there don't want to slaughter innocent animals because the armour witches are so reliable.

It's your manga so you pretty much have free will as to how often you want to update it and how you approach it in terms of colour vs black and white. I would go with whatever is comfortable for you, as Ne-on said previously.
