Read or watch Monster. It's a fantastic series that's made by the same author did 20th Century Boys. There's amazing character development for almost everyone and it's a true psychological thriller. The story keeps getting better and better with every episode, which is rare because anime and manga tend to drop in quality after a while. I also recommend the dub because they got it dialogue and acting right. I think even dub haters should be able to enjoy it, although hating on dubs should be avoided. Dubs should at least be given a chance, especially if you haven't heard the Japanese version because the comparison isn't really fair.

I would recommend these:
Seriousness:
Rurouni Kenshin, or Samurai X, a great series of redemption and growing. I extra recommend the OVA Trust&Betrayal. In my opinion, it is the best animated movie ever.
Berserk, character-heavy story of violence with touch of philosophy (just in my alley) and high fantasy setting.

Fun:
One Piece! Mindless adventure in bizarre world of superpowered fruits and pirates.

Relax:
Lucky Star, funny relaxing anime with no so much plot and many nice jokes.
K-On, cute girls playing in a band.

And one I disrecommend: Shigurui, Death Frenzy. DO NOT WATCH THIS! It was close to make me puke of pain. There's nothing nice in it, everything is twisted and wrong with no helping factors.
